Renowned for creating bespoke signature drinks to satisfy any client or guest’s thirst, and with 14 years’ local and international mixology experience, as well as numerous bartending accolades to his name, including the Bols Around The World 2013 and 2014 South African championship, Heath serves his Smoked Lime & Marmalade Havana Mojito taste-sensation by mixing lime, mint, rum, orange marmalade-flavoured soda water, and his special ingredient, rosemary-smoked brown sugar, all muddled and poured over crushed ice.

“In general, the classic Mojito and different flavour variations are the most popular cocktails in South Africa,” says Heath. “The Smoked Lime and Marmalade Havana Mojito variation brings out the flavour of ex-Bourbon barrel-aged Havana Club Rum, and compliments it with the spicy orange flavours of the marmalade”.

For those who prefer something stronger, Heath’s Healer Whiskey Sours and Sergeant Pepper Hearts Club are also causing a stir. Made using freshly crushed walnuts, walnut bitters, green apple puree and Jameson’s Irish Whiskey, the Healer Whiskey Sours is a unique fruit and nut combination, while the Sergeant Pepper Hearts Club is a refreshing take on the classic Sherry Cobbler, mixed using Absolute Raspberry vodka, pomegranate puree and black pepper.
